Kunekunes originated in New Zealand and their name means "fat and round" in Maori. They are smaller, hairier, friendlier, less prone to destructive rooting and slower growing than the pigs or hogs commonly raised for pork in the United States. Their pork is darker, meatier and more flavorful than the pale pink meat we're accustomed to buying in grocery stores.
We rotate our pigs through different pastures and supplement this diet with locally grown alfalfa, and feed from our friends at Texas Ridge, up the road in Deary. Texas Ridge produces feed "from locally-grown, non-GMO grains and legumes, and enhance with custom-formulated minerals for optimal health. "
We breed our sows once a year in the spring. The gestation period for pigs is usually an easy-to-remember 3 months, 3 weeks and 3 days. Kunekunes sometimes add a day or two but it's pretty close. Our pigs usually have 8 to 11 piglets which we wean at 8 weeks. We usually take our pigs to the butcher at 12 months and 16 months. The amazing folks at C&L Locker in Moscow do an extraordinary job cutting, brining, smoking and packing the pork for our customers. Due to FDA regulations, we sell by the third, half or whole pig. This is the best pork we've ever eaten and we think you'll agree!
